Can RustDesk's telemetry be disabled? Collecting user device information, session duration, and other telemetry data seems unnecessary for a remote desktop application. Users should have the option to disable all telemetry and they should be disabled by default.

I mean everything but the device info is required to establish the connection if its p2p no? How else would it know where to direct the connections.

You can set up a local RustDesk server. It mentions this during setup.
