Topic per title, basically.

For me: after setting up all the integrations and fall overs using the arr stack and Jellyfin (inc Sabnzdb etc)... I keep circling back to Nova video player.

It's arguably not even self hosting...but there something undeniably cool about sticking a USB stick into a router, installing a single app on your TV and boom, done. EDIT: of course, it can consume the *arr stack, integrate with Ombi etc

IOW, I really like stuff that simple to set up and punches above its weight class.

I don't really have a favorite; I offer a lot of software to the public for free use. Ansible and Proxmox are really helpful for me in doing that.

Hubs ADHD is making mint off my noodling - modified bingie on Kodi so he can find new and interesting things on the massive file server, an internally .htaccess'd domain that holds QR codes for him to check operating instructions and guides, and HA so he can make sure he's turned lights off and tell him when the tea is steeped.
