(jk going vegetarian or vegan is an admirable choice even if you do it noncommittally by reducing your animal protein consumption. Every 1 gram of animal protein required ~9g of feed depending on the animal.)

You have to be more righteous about it
It's a gradual building process, but some perks happen very quickly. Like your whole body being in distinctly less pain - that can happen in days depending on your inflammation status. Or being super bloated because you started eating way too much fiber way too soon, that can happen in a day.
After a few years you may find your immune system starts to become superhuman. Not even joking, it's kind of wild how much more resilient I am to sickness these days. Getting sick far less frequently, symptoms consistently becoming laughably mild, and duration is far shorter too.

Officially inspected meat from the US is not good enough for export into the EU. How much worse could uninspected meat be?

This recall list is for things the grocery store or restaurants see, not consumer sized cuts. When was the last time you bought 30lbs of menudo mix?
individual consumer packages may not bear this labeling, as retail stores may have applied their own stickers with pricing and safe handling instructions
The recalled meat could still have ended up in packages for consumers. What they're saying is that you can't know since retail stores would have cut up this meat and repackaged it.
