Been working forced overtime at work and my boss is getting on everyone's last nerve. Anyway, it's alumni weekend for my local college alma mater so loads of old friends are gonna be in town. I always bake a bunch of mini loaves to give out and people love it. I bake when I get stressed and it really brings me peace.I always get baked AF and play classical music whenever I bake and so today after work I spun up an old vinyl copy of New World Symphony and it's so absolutely brilliant. The New World motif is so iconic for a reason, and the way he reworks and adjusts it for each movement is amazing. The grandeur and slendor is so powerful and I always belt along while I make eye contact with my cats.
Anyways, I know the last time I posted about my baking my carrot cakes could not be saved, but these loaves are perfect. One of the people I know from my college days is a vegan, so I always make her a vegan loaf. This was my first time using liquid egg replacement and it seems like they came out perfect
