If I remember with subtitles there wasn't a way to source them in the app or swap to ones that might have different timings unless you downloaded them yourself manually. Did that change or am I remembering wrong?

I don't believe this is an option yet unfortunately. I think jellyfin is great and will always keep using it over plex, but I agree the subtitle management is not great.

There's a plugin that can do that, but it requires a little setup and an external account.
