If you want the actual canon, they did it as an act of mercy for their creators, even after humanity blacked out the sun/sky causing a global permanent ecological collapse. They could have just let humanity perish with no deficit to themselves.

It's only slavery for the humans because they're unhappy inside the matrix (due to the hedonic treadmill and philosophical concepts of freedom, agency, and reasons).

Outside the matrix, billions of humans and no agriculture means they'd be dead.

It's a commonly overlooked portion of the story because it's a bit too cerebral for the movie going audience; I highly recommend watching The Animatrix (canon prequel) for the full details
