That first pretty crazy to reference, wno all would know that movie?
Bob always insists that his ideas for specials are perfect, and often chooses references that are too obscure, or just inappropriate for a family diner.
Sometimes a string of better ideas get quoted by various other characters, throughout the episode.
So the writers give Bob their worst (least appropriate) idea, each episode.
Sadly, many of the better ones don't become signs for screenshots, because Bob cannot admit when he is wrong.
Pretty esoteric, for sure. Probably a couple people in the writing pool backed it and the powers that be just let it go as it's not pushing any buttons on the surface.
Or have no clue about the movie. Pretty hot lesbian scene for sure.
Joke aside, likely ignorance on their part.

I'd assume the second was a reference to the song...
The third obviously a pun on "New Beginnings." It's a reference to it being both the first episode of the first season but also the re-opening of the restaraunt.
