Sounds ok to me, it's usually very hard to get data like that deleted. Best to not let them get it in the first place.

Why would Samsung have my health data ???
They have an app, called 'Samsung Health', that allows you to see/record how many steps you did, how you slept etc etc
afaik you can sync data from a samsung smartwatch and let it analyze stuff
If you're not paying for it, you're the product.
One just never hears anything good about Samsung anymore.
