IIRC, years ago the Mexican state invested heavily in culinary training. I don’t know if that’s still the case.

All the workers are as poorly treated there as they are at a chain restaurant, but the petite-bourgeoisie gets to keep their 'smol bean' pretense. These small business owners are also one of the biggest advocates against unions, high minimum wage, and pro-worker policies.
