Chinese also eat blood pudding (aka blood curd or blood tofu), can be made from any blood like pig, chicken, or goose. I find it to be disgusting, never had it before even when my parent asked me to tried it.
We also have a few foods with blood in it in hungary. Most countries have them. Also fun bonus fact, because hungarian and finnish/estonian are related very distantly i understand their word for blood which is veri, for us its vér.

Fyi, blood can be used as a replacement for eggs in many recipes. I've even seen it used in savory macarons.

Blood has about the same amount of protein as the same weight in eggs so it makes sense.
It's basically equivalent from a culinary standpoint. You can even make meringue with blood instead of egg whites.

Semen can also be a direct replacement for egg whites. There's actually a cook book on it.

Morcela - aka Portugese Blood Sausage. Weird texture.. like sand and oil mixed together - before it's cooked.
I'm from a heavily Portuguese immigrant populated area and the local cafe would serve a morcela omelette. Nothing better after a night out drinking

In my culture we have a sausage made mostly with blood. Quite tasty.
We do as well in Norway. Exactly the same as the british black pudding/sausage.

I've never tried the British stuff, but our blood sausage is pretty good. Goes very well with lingonberry jam. :)
Had some in a pub in England. It's as good as identical to ours.

Mine too. I've tried it, but didn't like the texture much.
