How about the "private notes" chat on Signal?

I had seen this, but never thought about it. I may try it
You could use Open Camera (long press on gallery icon to change save location), or use Quillpad for multimedia notes not saved in gallery (can use Nextcloud for sync, or export some/all notes as a zip file including media).
Edit: N.B: I didn't test Nextcloud sync on Quillpad, and I think it's still experimental
This might be exactly what I'm looking for. Its usually the simplest answer that works, right? I got fossify camera and made a separate save folder. Good idea!
Not really sure what you're asking for here, and Android app or a service, or both.
Personally, I use the Android work profile for my work. Then just use whatever camera app you want but the photos will be in a separate gallery and not visible to Immich.
Alternatively you could just make another account in Immich specifically for these photos and sync them there from the other profile.
Yeah this is it. And for phones that are awkward about work profiles, one can use something like Island.
Keeps your work from seeing any of your personal stuff too.
