I don't even get what interests, even private ones, it serves to keep the Cuba embargo. As best as I can tell, it's really nothing but a holdover of past grievances.

It serves the angry Cuban expat community in Florida. Any politician wanting to be president someday had to appease them if they wanted to win Florida. At least that's my understanding of the situation.

There really are no reasons, other than political theater. The US doesn't want to admit that it couldn't defeat a communist power located right next door.
