I’ve arranged for my neighbor to come in during the day to feed her, clean her box, and give her some play time. I have her daily schedule typed up and he’s coming over tomorrow to meet her and so I can walk him through her day. I have cameras set up in places I know she hangs out so I can check in on her. Aside from that, what else can I do or get for her to keep her from getting too bored or lonely?

Your cat may treat you like a war criminal upon your return but she'll be fine. I wouldn't leave the ming vase out or the catnip planter but keep in mind most cats do better without their masters than the other way around.
