USB-C is just a physical connector, I’ve seen implementations of that connector be 5V power only and the full range of USB from USB 2 500Mbps through Thunderbolt 4 at 40Gbps.

The first implementation of USB 3.0 supported 5Gbps which is just as fast as the fastest SATA SSDs.

Biggest challenge with that approach would be the expense of distributing the faster flash drives, followed by bit rot corrupting the data on those stored for years.
