I'd like to be able to record through the peephole if possible. Otherwise I'm looking for something discreet that is waterproof for outside

I don't want to use ring or another unsecure platform, but I don't know what to search for to even start looking for what I need. I'm not in a position to self-host locally, at least immediately as long as it's something simple, pretty sure an rpi can handle that task but I've never played with one before. All my computer related skills have gotten very rusty

Are there privacy respecting products that work out of the box?

Edit- it was a false alarm and I feel incredibly silly but it was a good heads up. My neighbor had their package recently stolen so I was a little jumpy

Thank you for the suggestions! I'll look into them all individually but I'm quite out of my depth. I'm not sure how to differentiate privacy forward or not

That was definitely a first thought, but alas I was mistaken. I basically jumped to conclusions and I'll reflect on that, but it was not stolen
