This is ridiculous, if I'm going to be paying like $30 for a burger the chef can suck it up and leave out the mushrooms. If you're swapping central ingredients or being super nitpicky that's one thing, but small modifications are fine exactly because there is a chef. It's not a frozen food factory.

Food at people's houses is different because it's a gift. If I had to give Joann a $20 for my meal I wouldn't be embarrassed to ask for a minor mod. Maybe a little but the dynamic is still different because it's not her job.

But I still don't get why anyone would order a mushroom burger with no mushrooms.

I know, an exaggeration of an example, but I can't personally think of a food order like this that would be acceptable. If you want a burger, and the only serve one burger, it ain't going to be a mushroom burger on the menu. Just order something else! Every menu has literal pages worth of dishes, but you can't find one that would satisfy you? I just find it weird that people care that much about having a 'perfect' experience.

Maybe its because when I go to a restaurant 90% of the time its because I just don't want to cook/clean, not because I want a specific type of food.

Usually stuff like burgers comes with groups of toppings, eg. mushrooms+swiss+garlic vs bbq+bacon+pickles. If you prefer most ingredients in the first group much more than the second, but heavily dislike mushrooms, you have to either 1. make a small mod or 2. settle for a much worse option. Sure you could order something else, but why would you when you can get the ideal experience with a minor mod?

Note that I consider major mods bad form not only because it's more difficult for the kitchen staff but also because if you're doing that then it would be more efficient to just order something else.

The place I usually go to on the weekends has a menu that is 2 pages. They have maybe 30 items on there including the appetizers. 1/3 of the items are fish, which I don't like. If I couldn't order burgers without the tomatoes and pickles I'd be fucked. I guess I can pick them off but why not just ask for them not to be included so they're not wasted? I can see your point if they're making things in big batches and can't reasonably leave an ingredient out but for shit like sandwiches/salads/pizza or whatever it's not a big deal to leave something off. It's certainly not an insult to the chef to not like an ingredient. Taste is completely subjective, if you're insulted by someone having different tastes than you that's a you problem.

Really? Tomato and pickles? That is what makes something inedible for you? I understand strong flavors like horseradish, but even tomato? Tomato doesn't have that much flavor, its there for the juiciness.

Why would you go this spot regularly if you literally know you don't like anything on the menu?

Yes, why would I lie? Pickles are gross to me by both flavor and texture. Tomatoes I can deal with if they're chopped up but whole slices I don't like. I can pick either thing off myself (although it still leaves a taint, I wouldn't consider either thing to be flavorless, maybe my taste buds are more sensitive than yours) but why not just ask them not to include it in the first place and not be wasteful?

I go where my friends go. Anywhere that serves burgers/sandwiches around here is more or less the same anyway so it'd be the same anywhere else.

There are a lot of mushroom or chicken dishes which will also have bacon or sausage. For people that don't or can't have red meat, they have to ask that that be kept out.

Sometimes it's the easiest way to get a particular toppings group. Like a "mushroom burger" comes with Swiss, bacon, sautéed onions, and some sauce, or you can build your own for 10% more than getting a pre-built mushroom burger, minus the mushrooms. Plus, when you and-then an order, there's a high chance they'll miss something.

I mean, my local place asks me every time if I want to add peanut butter to my burger. I'd also expect modification to be more and more frequent with the prevalence of touchescreens allowing customers to highly customize items. I don't see modifying as a big deal, within reason. Not just for burgers, obviously.
