I'm Canadian. I can't go to America cause when I was a teenager I ended up in a mental hospital once, and we apparently shared that private health data with the Americans, and the border guards can and will deny you entry for "you once tried to hurt yourself 20 years ago", it's been in the news.

Jesus, no. 90 days is already too short to visit so many countries.
You know you don't have to do it all at once, right? In fact I would discourage it.
To be fair the biggest cost is flying to Europe. From there traveling between various countries is a breeze. Before I moved to Germany, the first time I was in Europe we went to 5 countries in 2 weeks.
Even still the 90 days is not necessary for the average tourist
Travel is very energy intensive.
If you have to fly to get there, it's better to see it all at once, using the trains to go country to country.

Israel already has everyone's data, for a long time and share what they want with any of the five eyes, Europe in general. So it's probably safe to say all Western states have each other's citizens data, plus a few states, if expedient toward US objectives.
