Man, people here have a very different sense of "A long time" on YouTube. I was hesitating to include TimeGhost because I've only watched them for about eight years.
For stuff I've been watching for less long, the creators that come to mind are:
Timeghost - they do history documentaries, focusing on chronological "real time" content, such as their current series, the Korean War Week-by-Week
LEMMiNO - does deep-dives into supposed mysteries. His older stuff isn't great, but shifted towards higher-quality long-form content about 8 years ago, and he does a good job on them.
AHOY - does documentaries on the history of games, and adjacent tech and culture. Not usually super deep, but well written, produced and animated.
Desync - makes stupid gaming videos, usually abusing bugs or just being silly. Doesn't post often, but on the rare occasion he does, it'll be well produced and funny.
For stuff more at the age I was thinking of originally, 10+ years:
John and Hank Green - cover a whole range of topics, although nowadays, it tends to be a mix of advocacy, science, philosophy, and just sillyness.
The Yogscast - Just a plain old gaming channel, albeit with unusually frequent and higher production quality videos. Nothing extraordinary, but consistently good and fun, despite the fact that they've been making videos for nearly 20 years.
Tom Scott - short video essays, explainers and documentaries on a variety of topics. Primarily, videos on different interesting places.
TomSka - The ASDF Movie guy. That said, just as good or better are his other skits, and now even his long-form content and videos essays.

- Taskmaster for Taskmaster
- Lessons from the Screenplay and Every Frame a Painting for movie theory (though both have slowed down a lot)
- El Train | Loop Kitchen for hip hop/sampling history
- NPR Music for Tiny Desk
- Team Coco for General Insanity
- Late Night with Seth Meyers for the only way I can watch news some days
- Triple J for the music

- CalebCity: short form comedy skits, often with a gaming tint to it
- tanks for nothin: watch someone build interesting aquascaped fishtanks, but the videos themselves are art too
Channels that I actually look forward to each release:
4WD 24-7 Australian four wheel driving, visiting a lot of places I wish i could go to.
Fire to fork Camp fire cooking, but at the moment also a bit of a travel blog as Harry is in Canada right now.
Andy cooks Cooking show by a personable ex-chef
Brian Lagerstrom More cooking by a slightly less personable ex-chef
Captain Disillusion Special effects debunks and explainers. Rarely puts out videos but they're worth watching when they do arrive.
Clickspring Master craftsman does metalwork. I often have no idea what he's talking about but it's just great to watch.
Dylan O'Donnell Astrophotography with an Australian slant.
LEMMiNO Deep dives into mysteries and other topics. Well researched.
Nat's What I Reckon Started no-nonsense cooking videos during COVID lockdowns, delivering a good mix of cooking advice, mental health awareness and swearing. His videos aren't as tight now as they used to be but they're still fun to watch.
Primative Technology No voice over, relaxing to watch dude in North Queensland improving his skills over the years to make huts, ceramics and some iron smelting. Make sure you turn on captions!
SomeOrdinaryGAmers. I find his switch to awareness about current issues regarding privacy is really good. It's easy to get lost in our busy lives.
I would also say that Clabretro and Cathode Ray Dude are really cool. Been watching them for years at this point.
Outdoor boys is the only one I actually watch
Stop Skeletons from Fighting has some amazing docs and just released another for Mighty Number 9 that was really good

- Clint's Reptiles - biologist, "best pet for you?" and animal phylogenies etc. Very engaging personality.

- Bernadette Banner - historical fashion
- BilliSpeaks and NotMadJustMoody - cats learning to "speak" using buttons
- Casual Geographic - entertaining and surprisingly accurate animal mini-documentaries

Drew Gooden. I've always loved him, but his anti-capitalist renaissance has been very enjoyable to watch
Most of my staples have been mentioned, but I want to give a shout out to Food Wishes, America's Test Kitchen and That Dude Can Cook, Chef Jean-Pierre. Been cooking staples for years now. Also, Hey Grill Hey but it's younger.
For drinks, How To Drink (though I feel they've been chasing algorithms and losing focus and soul), City-Steady Brewing, Cocktail Chemistry and Cocktail Time with Kevin Kos.
For politics, I go to Parkrose Permaculture and Farm to Taber. Both excellent and insightful even if I'm not always in full agreement.
For woodworking, it's StumpyNubs, Blacktail Studio (highly recommend even if you're not into woodworking), The Wood Whisperer. Lincoln Street Woodworking is newer but I still enjoy it.
I'm a car guy and honestly this space has become dismal. I watch Stay Tuned every Friday or weekend at least. I voted my conscience and unsubbed from Matt's Offroading, Rat Rod Racing, Robby Layton and all of the Utahbers. While I can't be certain I'm guessing they all voted for Trump and I just can't support that shit. Oh and I really enjoy Regular Car Reviews
