I am having many friends over and we wish to play games on PC, there will be just one PC available but 8 controllers connected to it. Looking for recommendations!

I created this set up specifically to play killer queen black, but if there are other arcade style games that are fun and can accommodate the player count I would love to know about them!

As a fallback, you could also have some hotseat games. Was recently thinking of HedgeWars again, which is basically open-source Worms Armageddon.

Tabletop Simulator is always my go to for big group local co-op (I believe it supports up to 10 players.) Pico Park 2 might be more akin to what you're looking for.

You can also check co-op.gg and filter by storefront, #of players, local, online, etc to see what results they give you! Just double check the game's individual chart to make sure the local co-op limit.

I'm pretty sure there's a specific Bomberman console release you can emulate with 8 players.

You could also emulate Smash Bros Ultimate, as it has 8 player support. Might be boring to just play a Switch game many people have though. Maybe look into mods for it?

And you can always use co-optimus to search for stuff. Just set At least 8 players, couch co-op in the filters: https://www.co-optimus.com/system/4/pc.html

Came in here to recommend Towerfall. Played it with 6 people once - it’s a blast and scales well enough with high player counts.

I think most of those only go to 4, some to 2.
