Mine is that the useState hook is an actual plague on the entire React ecosystem. Regardless of your opinions of React, if you wanna use something then use it right.

I just don't want all of my emails scanned through and used for further algorithm generation / AI training.
But feeding the sentiment of OP, some 80% of your inbound and outbound email ends up with either Microsoft or Google anyway.
True, I can't control that though.
I think any privacy service ends up irrelevant if it is not adopted on mass. For text there are loads of services but no consensus outside of WhatsApp (for my friendship groups anyway). I would like to move but no one is going with me.
The most private email servers are going to be whatever is being hosted out of medium to small hosting that specialize in hosting websites but also provide a mail service through postfix or similar. I guarantee you whoever you come up with will not have enough people, overhead or coordination to bother to go through your inbox unless you're literally begging the tech on the phone to help you fix it. Or your sending out a shit load of spam.
