Looks like Blue Eye Samurai and Owl House
Blue Eye Samurai wants to be grounded and moving, yet also an adolescent power fantasy, and it suffers for it. It's still quite good, and I try to grade on a curve when something is ambitious, but IMHO it's way too flawed to be "peak tier."
Also, the end of S1 is a total cop-out IMO.

Agreed. Apart from just being kinda so-so and cliched and a Marvel-style sensory assault that assumes emotional arcs are completed by stabbing and shooting things, it reeked of "You have to renew us because the story's nowhere near done!" That's understandable as a business move by people whom Netflix will happily fuck over, but it's bad storytelling when you know perfectly well that Netflix might fuck you over, and history has shown it won't be effective either, due to the aforementioned over-fucking.

TBH if they'd just done as you say in your spoiler, it would have been one of my favourites ... because I like messy and unfocussed stories (my favourite comic book character is Tank Girl)

Anthropomorphic cat world, where two dudes who work at a junkyard are secretly vigilantes that use a suped-up jet as their main vehicle/weapon. Crazy shit happens like kaiju attacks, evil wizards, alternate dimensions and so on.
It's awesome. It has the best opening theme ever.

Pantheon and Arcane. As someone who doesn't play LoL my LoL playing siblings made me watch Arcane and it was pleasant enough.
Pantheon is just a must see.

I don't see Avatar or Korra on your list. Both are phenomenal shows (although they might skirt too close to the "anime" line) edit: I just spotted Korra in the plan to watch list. Watch it. It's good.
If you're okay with 3DCG animation, my favorite cartoon of all time is Reboot and there is currently a project ongoing to restore the original renders into HD, with newly restored episodes being uploaded to YouTube periodically.
And if neither are your speed, another user here recommended Gargoyles, which is also a phenomenal TV show
currently on Batman Animated Series. some of my favs are: Jackie Chan Adventures, Samurai Jack, Boondocks, Beast Wars
I second Batman TAS, and raise you Gargoyles.
Bonus points: if you like Star Trek, almost everyone shows up at some point.

Not sure if more adult cartoons are in bounds or not but Harley Quinn is wonderful (surprisingly wholesome?). Archer and Rick and Morty have moments of incredible writing here and there too
If not, Over the Garden Wall lines up with Infinity Train in a few ways in my opinion.
To much sonic. Never knew there was so much of that. There no justice league cartoon, samurai jack.

Simpsons after season 8 is generally treated as different show, def. don't change your opinion after watching more. Except when you realize it's literally peak cartoon.

These are solid gold choices - it get's difficult to watch a lot of mediocre superhero churn-outs after this kind of quality.
If you're willing to go into animated films:
Son of the White Mare (Hungarian) - probably the high point of animation globally. Every frame is a work of art.
Star Wars: Rebels is good, but I'm not sure how watchable the later seasons are without the context of Clone Wars.
I don't strongly remember it being required vs a bonus, but for example twin suns is just a stand out episode, even without the additional backstory from CW. Granted i had already seen CW and it's been ages since i rewatched rebels.
I mean Ahsoka and Maul's stories continue in Rebels as a follow up from Clone Wars. I'm sure you could watch Rebels without having seen Clone Wars, but if you're going to watch Rebels I would highly recommend Clone Wars first.
Clone Wars & Rebels spoilers
- Maul being alive. Him just showing up in Rebels if you last saw him die in Phantom Menace leaves you with a lot of questions.
- Ahsoka battling Vader. It helps to know who Ahsoka is. Vader with a broken helmet saying her name is heartbreaking.
- Obi Wan and Satine. Maul and Satine. While Rebels doesn't mention her the relationship they had is important backstory. the Twin Suns episode is the conclusion to when Obi Wan and Maul first met, the finale. You can skip the middle, but it adds a lot.
My dad went in blind when it was on, and got most of the gist of the episodes where it might be nice to have context, like Twin Suns or the episode with the Nightsisters. I'd argue it's not NECESSARY, but context helps flesh the episode better. Same goes for stuff like the Darksaber.
Exosquad is a great 90s anime from the US. Basically Band of Brothers with mechs.

Seconding Avatar: the Last Airbender and Gargoyles. Other suggestions from my library: Ben 10 (2005) and its sequels are good. If you enjoy them, consider Generator Rex. Same creator and they have a crossover. Cadillacs and Dinosaurs is dumb fun for 13 episodes Netflix's Carmen Sandiego is good Cleopatra in Space is fun, but was canceled before it got an ending Final Space is also fun but incomplete Hilda is very worth a watch Jentry Chau vs the Underworld Kipo in the Age of Wonderbeasts M.A.S.K. is mid but has the most 80s opening theme ever Oban Star Racer is a fun ride Phineas and Fern takes a a formula and turns it into an inside joke that somehow stays fun for 10 seasons Transformers: Animated and Transformers: Prime are great. The rest are ok, but mostly exist to sell toys. Trollhunters - spinoffs 3Below and Wizards are fun, but not as good. Young Justice - slightly darker Teen Titans with a more serious visual style.
From your "to watch" - Teen Titans, Avengers: Earth's Mightiest Heros (but not the follow-up Avengers Assemble) and My Adventures with Superman should also move to the top of the list
I can't load your image in any higher resolution and its too blurry for me to make out more than bold logos and figures, but I don't think I see Final Space on there, or Kipo and the Age of Wonderbeasts, both of which are absolutely stellar in my opinion. Definitely watch Avatar The Last Airbender too.
Finally, as someone who doesn't know LoL and hates riot games, watch Arcane. It is excellent art.

- Loonatics ( the futuristic Looney Tunes superhero show that was absolutely sabotaged IMO )

- My Life As A Teenage Robot
- Reboot ( it's cheesy and janky enough to be charming since it's the pioneer of 3D CGI cartoons )
Edit:
After looking at the list, if the Sonic one with Sonic and brown fur Tails is the goofy Sonic with the very goofy Robotnik, I'd recommend getting on the other Sonic the Hedgehog in the gonna watch ( not underground because that wasn't a high point, IMO ). I mainly recommend it if you want a darker take on Sonic's world where Robotnik has already taken over and Sonic and a band of Freedom Fighters try to stop him.
Beast Wars was fun to watch, but just for the early 3D

Futurama, if you like Simpsons and south park it's a no brainer. The Venture bothers is another good comedy animated show but different type of humor than above shows, still some parody and references.
